Roasted Red Kuri Coconut Curry Squash Soup

2014-10-24_18.14.58Sounds like a mouthful, doesn’t it? Let me tell you – it’s a tasty mouthful! My boyfriend and I subscribe to a local service called The Organic Box This week, I received a red kuri squash in my box and had no idea what I wanted to do with it! It was a lot LOT larger than I anticipated (5 1/8lbs before I carved it up) and it was kinda intimidating. So of course I go to Pinterest for inspiration! Gina Homolka, the genius behind Skinnytaste, saved the day with a delicious recipe. I even had naan on hand from the farmer’s market! I forgot to thaw it so unfortunately, I have to wait until tomorrow to indulge, but even without it was delicious! It also gave me another excuse to use my immersion blender.

I added a full can of light coconut milk (400ml) to help balance the lack of chicken stock (I used one 900ml) carton), I ended up with nine, 1 cup servings at 3 Weight Watchers points per serving. Even with a dollop of sour cream and some cilantro – no change to the point value!

The Turkey Hangover

Yesterday I decided to invite a group of friends over for an Easter dinner. A lot of these folks live far away from their own families and would be missing out on their own feasts. I remember my first Christmas Eve without my family. My boyfriend was out of town too. I sat in my living room and bawled my eyes out and mowed down on a Double Big Mac Meal. Supersized? You bet. Not one of my finer moments.

This happens often in our industry since a lot of us move around a lot for work. I work with a guy who typically puts on the holiday spreads, but since he was on vacation, I opted to do it instead. The difference? I didn’t extend the invite to everyone.

I’m seriously waiting for the backlash on this one. Let’s be honest. Just because I invited a couple colleagues, doesn’t mean I’m required to invite the entire office into my home. I can screen my invites as I please. And frankly, I only wanted to spend the day in the company of those I enjoy.

That being said, those awesome folks opted to chip in with cash towards the grub, or they brought food. Or booze. Man we had a lot of wine.

We had:

  • Extraordinary Cheese dip w/chips & crackers
  • Deviled Eggs
  • Orange Juice infused Ham
  • Crispy Sweet Potatoes
  • Perogies
  • Turkey (of course!)
  • Ceaser Salad
  • Mixed vegetables
  • Mashed Potatoes & Gravy
  • Stuffing (NOT Stovetop!)

Not to mention Mini Eggs for dessert, a fruit tray and a couple of cakes I baked. GOOD TIMES.

Now, as I mentioned, there was a LOT of wine for us to drink. It was ridiculous how much wine we drank. Of course, since I didn’t really have to drive anywhere – I think I drank the most. And man, am I ever paying for it today. So to you I say: Happy Easter, enjoy your time with your family, friends, whomever….just be warned – that second helping around the table/bar is not worth it the next day.
